Concept

“Peremena” is a new restaurant of contemporary Russian cuisine by Duo Band. Its foundation lies in the flavors and products of Russia, with room for both creativity and nostalgia —

but not for clichés or stereotypes.

The menu is a reinterpretation of Russian cuisine that preserves its recognizability while adding new colors and emotions. The base is familiar — dumplings, borscht and pancakes, northern fish, game, berries and grains. On this foundation, like on a sourdough starter, we’ve built a modern mosaic: forshmak made with Murmansk salmon, rabbit kidneys in port wine, beef rib with spelt, and a pie with pork and horseradish ice cream. Desserts are built on unexpected combinations, such as chamomile cheesecake and dill choux pastry.
